State officials took matters into their own hands when it came to enforcing COVID-19 public health orders in Boulder County.
On Saturday, December 5, the state penalized restaurants that had been violating public health orders.
Four restaurants had their liquor licenses suspended since counties started shifting into the new severe risk level red on Colorado's COVID-19 dial.
The businesses included Parrott's Sports Grill in Firestone, Bulldog Deli & Pizza, and El Charro Restaurant in Greeley.
The fourth restaurant, Parrott's Sports Grill, also had all of their alcohol seized by the state on Saturday.
"Probably over $5,000 of product went out of this building," head bartender Stephanie Feltz told 9NEWS. "It was loaded up onto a truck and taken away."
The communications manager with Colorado's Department of Revenue, Suzi Karrer said the Lyons Den had continued to violate public health orders after multiple warnings from local authorities.
"We have followed all restrictions from early March up until this last shutdown," said Lyons Den owner Randall Yarbrough. "When we hit this last code red, we felt like we couldn't do it."
The violations included people not wearing masks, no social distancing, and indoor dining.
"You know we're not forcing anybody to come here," said Feltz. "They want to be here. So I mean, what more can you say to that?"
The Lyons Town Board consequently voted to revoke the business license of the Lyons Den Restaurant and Taphouse.
Lyons Mayor Pro Tem, Mark Browning hopes this will be a rare circumstance.
